We may be that “crazy homeschool family” in the neighborhood, but we do love a good meal! I wanted to share some of our favorite meals with you each week! Yes, we have our fall back foods, it’s peanut butter and jelly sandwiches for Little Miss, hard boiled eggs for Ray Ray and ramen noodles for Moe Man, but when it comes to supper, we sit down for a family meal and mommy only cooks one!
Ray Ray and Daddy are not big fans of rice…as in, they will not eat it period! However, when I make Chow Mein Hotdish…they can’t get enough of it! This has been one of those recipes that I grew up with and I am happy to share it with my family now!
Chow Mein Hotdish
2 lbs hamburger
3 stalks celery, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1 can chicken with rice soup
1 can mushrooms (you don’t need this, but the boys love them!)
1 can water chestnuts
1 T. soy sauce
2 c. uncooked rice (we use whole wheat Minute Rice)
Brown hamburger, celery and onion. In a separate bowl, combine the remaining ingredients. Add 3 cans of water (1 for each can of soup). Mix all ingredients together and put in a 9×13 casserole dish. Bake at 350° for 1 hour, or until rice is tender.
Serve over Chow Mein noodles with extra soy sauce as wanted. You could add in a side salad and breadsticks if you wanted, but this seems to fill us full (all five of us) all by itself, with leftovers for the next day’s lunch!
